More holiday desserts!! I’m having so much fun digging up sweet recipes to share from my collection, I may just continue to do it until Christmas is over!! This one is really wonderful. It’s not overly sweet, and has that great “tang” from the cranberries, paired with the warmth of the spice… PERFECT cake if you are in a chilly climate!! It’s a fairly easy recipe, absolutely worth a try if you have to contribute to a holiday party! You can even make if up to 2 days ahead of time, keeping it stored at room temp. You can make it 1 month ahead of time if you want to freeze it!

White Chocolate Cranberry Spice Cake
Cake
•2 ¾ cup cake flour
•2 t cinnamon
•½ t nutmeg
•½ t allspice
•1 t baking powder
•½ t baking soda
•½ t salt
•3 eggs
•2 cups sugar
•1 cup canola oil
•1 t vanilla extract
•1 cup sour cream
•1 ½ cups fresh cranberries or frozen unsweetened, chopped coarsely
•6 oz white chocolate, chopped into 1/4 inch pieces
Glaze
•2 oz white chocolate
•2 t shortening
Start by preheating your oven to 350°. Generously greas a 12 cup bundt pan with shortening and then sprinle with flour. This will help when removing the cake from the pan.
In a medium bowl, stir together flour, spices, baking powder, baking soda and salt. In a larger bowel, beat the eggs and sugar at medium speed for about 2 minutes, until they are fluffy, thick and slightly lighter in color.
At low speed, beat in the oil and vanilla. Slowly add the dry ingredients into the mixture, making sure they are well blended before adding more. Beat in sour cream and finally stir in the cranberries and 6 oz white chocolate.
Pour mixture into bundt pan and bake for 60-65 minutes. Insert a skewer into the center, and if it comes out clean, the cake is done. Keep the cake in the pan, and place on a wire rack for about 15 minutes to cool. After it’s had a bit of time to cool, unmold the cake onto the wire rack to cool completely.
To make the glaze, melt the 2oz white chocolate and the shortening in a medium bowl (special instructions for melting white chocolate are located here). Stir frequently until mixture is smooth. Drizzle over cake and let stand until set.
