hah ha! I totally screwed this one up!! Rick’s company does a months worth of fund raising every year for the United Way. There are lots of ways to participate, but they do a week long bake sale, so I thought that’d be a perfect way for me to contribute. The folks in Rick’s office benefit from my cooking rather often, so I wanted to make something new and different. I am a TREMENDOUS fan of Foodgawker.com. I am ALWAYS on it looking for new ideas… and I came across a recipe for these Coconut Lime White Chocolate cookies. I thought “oh man, that sounds SO good! I’ve GOT to try these!”, so I put together my grocery list and went shopping.
The first sign that something was about to go wrong was when I got home with my ingredients and could not find the recipe again. I looked through my favorites on FoodGawker, then I searched all of their listings… What happened?? Maybe… I didn’t find it there? I get so many emails full of recipes… I went through everything I could find and couldn’t find that original recipe I fell in love with. There were other Lime Coconut cookies on FoodGawker, but something made me decide to try to go it alone. I decided to use one of my favorite cookie recipes and just add Lime, Coconut and White Chocolate to it instead of it’s typical flavors.
Wow. MISTAKE! heh heh heh My cookie recipe wasn’t intended to have so much liquid (lime juice) in it, so it required more flour. I had wanted to put lime peel in the recipe, but the limes I had were very thin-skinned. Typically that wouldn’t be an issue, but I don’t have the correct tools to do the job, I always use a fork, but the lime skins were too thin. Oh well, I figured I’d just do what I could with what I had so I mixed up a big batch and got the dough to the consistancy I needed, plopped them on the cookie sheet and baked.

Well, they looked fantastic! They came out looking exactly like what I wanted. They tasted like sugar cookies with White Chocolate Chips… Rick said they were completely tasteless. Not good enough for a bake sale
I had used the juice of 3 limes and you couldn’t even tell. So I thought “well, I have two more limes, let’s give it a shot!”. So, I added more lime juice and tried again.
AH! They were SO SOUR! Terrible. I realize at this point that I have two options: 1) Add Sugar and get even farther from the recipe, risking disaster or 2) bail.
I bailed.

I’d LOOOOVE it if you posted your opinions, or perhaps your recipes for Coconut Lime Chocolate Chip cookies! Even if you just want to go to the forum and make fun of me… I can take it!
